I've always wanted to try that....I love venison. I've tried both horse and kangaroo, they are also excellent. Not a fan of bison though....not enough flavor. Take care, Eric
 
Venison is overrated! When it's good, it's good, when it's bad .... well it's really bad - only the dogs could love it! Nothing special about rabbit or squirrel. The bison I tried was pretty good.
My husband got a young bear up in Canada, it was out of this world!
 
I had some "antellope" a year or so ago while visiting Edmonton thanks to Tom and Ype DeBoer!!!. Very few permits are given yearly, and Tom gets lucky enough to get a permit once in a while. Prong Horns actually. They call them antellope, but they're more closely related to deer. Absolicious!!! Nothing like perfectly cooked prong horn and some good wine then tinnies of beer and hockey night in Canada (Edmonton v Calgary nonetheless)! That was a great trip.

hmmm, maybe a trade of venison for some fresh fish could be arranged! venison is good if the person dressing it does a good job, it is cured properly and then cooked correctly. even if taken care of well, overcooking can make it very tough and un-tasty! slow, cool cooking with butter and olive oil usually does the trick!

I had some beefalo out in wyoming years back; was okay but don't remember anything memorable one way or the other about it. don't want to eat any bear, don't want to eat any animal that seems quite intelligent ('course that would allow including a lot of humans......... : p don't want to go there)

We had heard of all of the above & we tried the one season & gave up! We have had some good venison, that's what made us give it a try!

If it were charging you, you'd shoot it! My husband was with a group of guys that were deer hunting on an island. They dropped him off at one end & went to the other side to drive the deer. It was the classic sitting on the log waiting for the guys when he got an eerie feeling & heard one little branch snap, looked over his shoulder & it was coming!

oh, you mean a bear? :) definitely if self-preservation were involved, all bets would be off! ;) but, I probably wouldn't hunt it in sportsman-fashion unless food was very scarce, in which case again most bets would be off

OH YEAH! He says one has no idea how fast they can travel! His lucky John Wayne shot from the hip ended up right between his eyes! The bear was about 15 feet away when it dropped to the ground! I was almost a widow our first year!
