This is a duplicate I did after having something similar at a nice hotel once.

Too pretty to eat, but it tasted just as nice as it looked. :biggrin:

Just in case, that big thing of apricot colored mass is a scoop of Mango sorbet. Originally it should have been lime sorbet, but I could not find it.

I'm not showing the dressing, but it is a lime vinaigrette.

I'm wondering about the purple flowers too. I hope you
have dandelion greens in there somewhere...very good for
you. Linus, I grow nasturtiums for salads every year for
the peppery taste. A local plant called poke is a wonderful spring addition to salads when very small.
 
Borage.
It is actually blue in person, but the color in the picture came out purple.
Speaking of which, I wanted blue purple baby pansy flowers, but the last one ran out when I went to the market that day.
I really wanted something blue, and borage was my only option.
While pretty with star shape, it had no taste and the texture was horrible with all the hairs on the flowers. lol

The original salad also had lime sorbet, but I also could not find it anywhere, so I opted for mango sorbet, which I liked a lot! :)

Dandelion leaves taste a bit too strong, bitter for me.
The greens I used in this salad, I forgot the name, but it's something I have never seen before.
It is a hybrid crop I think between iceberg and romain. It is amazing because it has that nice crisp texture of iceberg lettuce but taste a bit sharper but much milder than romain lettuce. The color is also in between.
I should have noted the name, oh, well...

Nasturtium flowers, in the yellow, bright orange and sometimes reddish orange, are available in the farmer's market here, but I like the look of baby pansy flowers as in the original salad, and they are so cute! :)

I've had them before. They are quite good, although I never knew they were edible until I came to America. lol
 
The dandelion leaves have to be harvested when
very small and added with the bitter edge in
mind...like just a small addition. There's a small head, red cabbage that's really nice in
salads. I've forgotten how to spell the name, but it sounds like radicchio. We're salad freaks
and eat them at least 3 or 4 nights a week.

You are right. Radicchio. It is a fancy Italian veggie.
I love the look, but I do not like the taste. plus, they are like $10 per small thing of it.
I think you like bitter tasting veggies. :p

"greens" with darker color are supposed to be healthier...
also somewhat bitter. Himself makes the salads and throws everything he can find into a salad: ham, avocado, squash, chick peas, lima and kidney beans and
two or three different kinds of lettuce and a top notch
first press, cold press olive oil...very olive oil particular.
His salads are complete meals!

Yes, you can definitely make a meal out of salad depending on what you put in and of course the portion size. ;)

I make lots of variations of salads, so I have very specific items to be mixed together to make certain salads.

That sounds like a recipe of cocktail I had last week.
Oh, wait, but they used spiced rum. :)

Oooh, speaking of dark rum, I love rum banana!
