May the specks, affecting both this flower and your vietnamense (Botrytis?), be due to your new watering regime? If so, maybe you should isolate your Paphs, when in bud, and water them more carefully?
(May not have shown itself as a problem during seasons with a higher temp, where remaining water evaporated more speedily, though)
