I tried cutting off the sheath one year to prevent it from blooming to see if it would put out more growth but it did the same thing

I agree, that's pretty cool. Perhaps play around (carefully) with slightly higher light & ferts to force a second growth?

Try a little auxin on the rhyzome and see if it will break a dormant bud and make a second growth.
