I am not sure of exactly what the question is. If the holidays have taken all of your time, are you saying that orchids have suffered. Well that is not anything that they have not done. You did not find time to care for them. There isn't a magic fix for that. Either you can care for them or you can't. In my mind growing orchids takes a certain commitment in terms of time and money. That is the first question that you must ask yourself, do I really have the time???
You have asked about gigantea before, right? It is a slow growing species. It is unfortunate but you can't change that. It is what it is.
Schilleriana can be grown in sphagnum moss but again, you need to determine how to do that correctly. If it is in moss and is drying out very rapidly, it is not potted correctly. Either the moss is too little and not holding water OR it is potted too densely in moss and not allowing water to flow through the pot. Using sphagnum moss is not an easy proposition.
