Where in LA are you? I don't currently have a greenhouse. I'm still in school, so my sensitive plants move four times a year with me between school and my family's house. Most of my Catts, Vandas, and larger Bulbos. I leave home and just set a timer for watering during the warm months. I think it will be easier to grow the more intermediate growing plants once I am able to set up a greenhouse of my own. I have seen those cool pots and that's why mine was planted in the unglazed clay pot. It's the same basic idea, though those cool pots are probably more efficient at the cooling. The evaporative cooler walls do seem to make some sort of a difference though not as much here as in a less humid climate.
Have you ever been to Louisiana Orchid Connection in Baton Rouge? He has a very nice greenhouse and the most efficient cooling walls I've seen around here. He's been successful growing many things that should never be able to survive here up next to that wall.
Another option is to actually use a window unit or portable A/C to cool the greenhouse at night. I've been told there's someone in Lafayette who has an A/C cooled greenhouse, and I've spoken to someone else who is very successful at growing Pleurothallids using a portable A/C in a greenhouse on the Gulf Coast.
