Good question Michel - Judges try to determine the color of the flower under "natural light" as much as possible . It's the reason why there is usually a stream of judges bearing plants leading from the judging room to the nearest point of bright light or sun-light. Of course, this is a problem for centers that judge during other than daylight hours unless there is a source of color-corrected lighting available. The difference in pouch color in your photos is a good case in point.
To get the very best ideal true colour, orchids should only be judged outside, at mid day, on June 21 when the sun is shining. Not practical of course; but, that is the best way to see the absolute true colour.
